Holiday spirit

So, I'm away for this holiday and have been slowly getting in the Thanksgiving-y mood.  I decided to post another FAVORITE, that doesn't have a link.  My new favorite (Bars) dessert.  [to qualify - I love desserts.  I love them too much to have ONE favorite.  So I have divided them into categories, to include all my favorites: Pies, Cakes, Cookies, Bars, and Other.  There are Holiday Favs to most of those categories as well.....]  Here's the newest Holiday Fav = Pecan Pie Bars.

Pecan Pie Bars


Heat oven to 350 degrees. Spray 15x10x1 pan


Crust: 

2 1/2 c flour

1 c (2 sticks) butter, COLD, cut into pieces

1/2 c sugar or splenda

1/4 tsp salt


In large bowl mix all ingredients @ medium speed with mixer, until mixture resembles fine crumbs.    Press firmly into prepared pan.    Bake 28 minutes or until golden brown.


Pecan pie filling:

4 eggs

1 1/2 c. Karo syrup

1 1/2 c sugar or splenda

3 Tbsp melted butter

1 1/2 tsp. vanilla

2 1/2 c chopped pecans


Beat eggs, corn syrup, sugar, butter and vanilla together until well blended.  Add pecans.  Immediately pour over hot crust, spread evenly.  Bake 25-30 minutes or until filling is slightly firm in the center.  Cool completely - cut into bars. (cut small - 1” square)

Wow! That sounds delectable! I may have to add another dessert to the TG menu. Hmmm, thanks for adding a few more inches to my you-know-what =)

:-) We will be in Toronto at the same time! Wonderful. Mom has lunch planned Thursday around noon or one, and Friday at the same time we are supposed to be at Jermie's uncle's (also in Toronto.) So, Thursday afternoon post-nap or Friday morning we should get together. You can txt me (316-706-7408) but you know how it goes with cell phone reception down in the boonies. :-) You're welcome to stop by my mom's any time and I may do the same out at your dad's. When are your meals planned for? I'll try to miss them. Well, maybe just get there in time for dessert!
